You might be surprised to learn that ranking on Google has a lot to do with the categories you have selected for your business. There is an excellent free Chrome plugin (extension) called GMB Spy that allows you to view the categories that your competitors have selected. You can then use GMB Spy to learn about them.

For instance, see the screen shot of the day spa listed below. They have only selected the category "Day spa." However, if they looked at their competitors' listings that rank higher, they would learn that there are other categories such as "Facial spa" that will allow them to rank higher and also, more importantly, enable them to get more phone calls and new clients.

Caveat--you should only list categories that your business actually provides and that can be verified on your website. For instance, if you list the category of "Facial spa", you should have a service page that is called "Facials." It is becoming increasingly difficult to fool Google.
