Oh yea! Gonna make these next weekend!

Strawberry Shortcake Cookies 🤤

Ingredients
Strawberries: 1 ½ cups, diced to ¼ inch thick pieces
Lemon Juice: 1 teaspoon
Sugar: ½ cup plus 2 tablespoons for sprinkling
All-purpose Flour: 2 cups
Baking Powder: 2 teaspoons
Salt: ½ teaspoon
Butter: 8 tablespoons, cold and cubed
Heavy Cream: ⅔ cup
Baking Soda: ¼ teaspoon
Vanilla Extract: 1 teaspoon
Optional Glaze:
Strawberry Juice: 1 teaspoon (from the diced strawberries)
Powdered Sugar: ½ cup
Directions
Preheat the oven to 375°F.
Prepare Strawberries: In a medium bowl, combine diced strawberries, lemon juice, and 1 tablespoon of sugar. Set aside.
Mix Dry Ingredients: In a large bowl, combine flour, the remaining sugar, baking powder, baking soda, and salt. Cut in the butter until the mixture becomes crumbly.
Combine Wet Ingredients: Pour in the heavy cream and knead until the dough comes together.
Incorporate Strawberries: Stir in the diced strawberries, being careful to discard any excess juice at the bottom of the bowl.
Shape Cookies: The dough will be sticky; refrigerate between batches if necessary. Scoop about 1 ½ tablespoons of dough per cookie onto a baking sheet lined with parchment paper, spaced 2-3 inches apart. Sprinkle a bit of sugar over each cookie.
Bake for 15 minutes until the cookies are fluffy and baked through. They should be somewhat moist on top right after baking.
Cool and Glaze: Let the cookies cool completely. Optionally, prepare the glaze by mixing 1 tablespoon of strawberry juice with powdered sugar until smooth. If the glaze is too runny, add more powdered sugar. Drizzle over the cooled cookies.
This recipe should help you create cookies that closely resemble the ones in the picture, complete with a delightful strawberry glaze!
