Cajun Garlic Butter Chicken Spaghetti with Creamy Three-Cheese Parmesan Sauce
Ingredients:
12 oz spaghetti
1 lb boneless, skinless chicken breasts, cut into thick strips
2 tbsp olive oil
3 tbsp butter, divided
4 cloves garlic, minced
1 tsp Cajun seasoning
½ tsp paprika
Salt and pepper, to taste
1 cup heavy cream
½ cup chicken broth
3 oz Velveeta cheese, cubed
½ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
2 oz cream cheese, cubed
½ tsp Italian seasoning
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the spaghetti in a large pot of salted boiling water until tender with a slight bite. Drain well and keep it ready while you move on to the sauce.
2. Heat the olive oil with 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken strips and season with Cajun seasoning, paprika, salt, and pepper. Let them cook until nicely browned on the outside and fully cooked inside, turning as needed for even color. Transfer the chicken to a plate once done.
3. Reduce the heat to medium and add the remaining butter to the pan. Once melted, stir in the garlic and cook just until it smells rich and aromatic, about 30 seconds.
4. Pour in the chicken broth and heavy cream, stirring gently to blend everything together. Let it simmer softly for a few minutes until the sauce begins to slightly thicken.
5. Add the Velveeta, mozzarella, Parmesan, and cream cheese. Stir slowly as the cheeses melt, forming a thick, silky sauce with a smooth finish.
6. Sprinkle in the Italian seasoning and taste the sauce, adjusting salt and pepper if needed.
7. Add the cooked spaghetti and toss until every strand is fully coated in the sauce. Add the chicken back in and gently mix so everything is evenly combined and warmed through.
8. Serve hot with a sprinkle of fresh parsley and a little extra Parmesan over the top.
