👉 Ingredients:

• 2 x 550g Woolworths Minestrone Soup Mix
• 250ml pouring cream
• 1 chicken breast per person
• Lemon juice
• Smoked paprika, chilli, salt and pepper to taste

👉 Method:

1. Add both soup mix packets to the Instant Pot with the pouring cream, smoked paprika, a touch of chilli, salt and pepper. Pressure cook for 30 minutes.

2. While the soup is cooking, coat the chicken breasts in lemon juice and your choice of spices, then air-fry until golden and cooked through.

3. Once the soup is done, blend until smooth, slice the chicken and serve on top.

👉 Per serving:

• Calories: 412
• Protein: 28g
• Carbs: 20g
• Fat: 22g
• Fibre: 5g

My current health goals look different to most of my clients.

While most of them are focusing on body recomposition, getting strong after kids and working towards reducing perimenopause symptoms, I am growing a baby. But I lost my why too.

Like most people on a quest to achieve a goal, I started with good intentions:

👉 Eat nourishing food while surviving pregnancy symptoms and life with a busy toddler, far from family support.

And the truth is that my journey over the past five months of pregnancy has not been linear, it has not even been up and down.
(It has mostly been on a downward trajectory.)

That was until a few weeks ago when I started to revisit my why.

👉 Why this pregnancy needs better nutrition and better rest.

👉 Why I need to take my foot off the control pedal.

It has taken journaling, crying, talking and more crying to process everything that is changing behind the scenes.

And as soon as my why started to ignite again, my food choices shifted from snacks to real meals, my work rhythm softened, and the mindless scrolling in front of the TV stopped so I could be more present with my family.

We all have our uncomfortable seasons.

But it takes real effort to do the work and find your way back.

This Creamy Pumpkin Soup is on repeat in our house.

✨ Ingredients:

1kg pumpkin/butternut, peeled and cubed
1 tin reduced fat coconut milk
1 tsp garlic powder
1 tsp onion powder
1 tsp ginger spice
Salt to taste
1 tbsp olive oil (for chicken)
Juice of ½ lemon
Chicken breasts (1 per person, roughly 100g each)
Lemon and herb seasoning

✨ Method:

Steam the pumpkin (I used my Instant Pot) until soft, then drain the water from the bottom.

Add the coconut milk, garlic powder, onion powder, ginger and salt directly into the pot with the pumpkin and blend until smooth.

Leave on a slow simmer for a few minutes while you cook the chicken.

Season the chicken breasts with lemon and herbs (I love Dill), then cook in olive oil in a pan over medium heat with a squeeze of lemon until cooked through.

Slice and serve on top of or alongside the soup.

Protein: 33g
Carbs: 33g
Fat: 14g
Fibre: 5g
