Working from home today because nature is fully naturing out there! With parts of buildings flying around. Open fridge close fridge, repeat... I realised I have all the bits in my fridge to whip up a Shakshuka.

Added bonus: I had some homemade Bulgarian Yoghurt from last night, some toasted Ouma Brood, and a cold Castle Lite to wash it down. Pure vibes. ( ps. light candle )

My Stormy Day South African Shakshuka
A spicy, fragrant North African classic with a local twist.

Ingredients
2 tbsp Olive oil
1 Small red onion, sliced
1 Garlic clove, minced
1 Small red capsicum (bell pepper), sliced into strips
1 Fresh tomato, diced
400g Can crushed tomatoes
1 tbsp Tomato paste
1/2 cup Chicken/veg broth (or water)
1 tsp EACH Paprika and cumin
1/4 tsp EACH Black pepper and cayenne pepper (adjust for heat)
1/2 tsp Salt
4-6 Large eggs
2 tbsp Fresh coriander, roughly chopped

To serve: Toasted Ouma Brood, homemade Bulgarian Yoghurt, and a Castle Lite.

Method
Sauté: Heat oil in a medium pan over medium-high heat. Cook the garlic and onion for 2 minutes until translucent.

Soften: Add the capsicum for 1 minute, then the diced tomato for 2 minutes until it starts getting pasty.

Simmer: Stir in the canned tomatoes, paste, broth, and all your spices. Lower the heat and simmer for about 5 minutes until the sauce is thick enough to hold an indentation but still saucy.

Poach: Make small wells in the sauce and carefully crack your eggs into them.

Cook: You can either pop the pan in the oven at 180°C for 7–12 minutes, or keep it on the stove with a lid for about 3 minutes until the whites are set but the yolks stay perfectly runny.

Serve: Scatter that fresh coriander over the top and serve immediately with thick slices of Ouma Brood for dipping!

Just in case you missed it: Zeke’s Beach Lounge is officially open (liquor license and all) and the view is incredible. I stopped by for two slow, delicious glasses of red wine and a great playlist. The staff are so friendly and full of energy!
