"I’m well-travelled and cultured, always looking to around the world to see how people create the environments in which people love to eat and drink. My true passion lies in bartending, in the creation, craft and science behind everything that goes on all while making world as effortless as possible. I started off my career in the hospitality industry as a bartender in Bristol, England where I later advanced my career to Assistant General Manager of a fine dining restaurant in the British countryside.

Focused on developing my skill behind the bar, I managed to secure a position as a cocktail bartender at a cocktail bar called ‘Amoeba’. Amoeba, A beautiful cocktail lounge bar, known for it’s typically quickly British mixology and focused on well-made drinks using good quality ingredients, focused on delivering great classic cocktails. Later I joined the awarded Hausbar, one of the top classic cocktail bars in Europe, which sported over 128 classic drinks menu and stylish decor.

My experience gained till this point of my career got me noticed in the industry and that is when I secured a position at the acclaimed Hyde & Co – an authentic 1920’s speakeasy. Eager to explore and travel, I decided to move to the Middle East, where I resided in Dubai. I was selected to be a part of the handpicked team, missioned to setup Dubai’s first speakeasy. As the bar manager for the large, internationally acclaimed hospitality group, Global Hospitality Asset Management, I oversaw the opening of many other bar operations ranging from craft cocktails to large scale beach clubs.” - Peter Good

Dominic Walsh began his career in the hospitality industry at the young age of 14, washing dishes at a dive bar. As soon at the opportunity presented itself, Dominic grabbed a position as a training bartender at a mobile bar company and very quickly moved up the ranks to manager. Event bartending allowed for the opportunity to travel the country, serving mostly the Rich and famous.

From there, Dominic decided to open his own mobile bar company with 3 of his closest friends and Molecular Bars was born. They aimed at not only delivering delicious drinks but creating experiences that no one would ever forget. This concept quickly turned into a consulting opportunity resulting in Dom advising on some of the most successful bars and restaurants in South Africa as well as making a name for himself by winning regional cocktail competitions and representing South Africa on a global level (Angostura Cocktail Challenge, Tahona Society and World Class)

Over the coming years Dom travelled South Africa as a consultant as well as a brand Ambassador for Hendricks Gin and Monkey Shoulder Whisky. The PunchBowl Pilgrimage – a 30 day bar tour around South Africa using public transport and paid for by tips generated through working a guest bartender in bars all over South Africa – sparked his love and passion for South Africa and its vibrant culture. It was from there that he embraced his love for challenging, new ingredients and vowed to use as many from South Africa as possible when creating a menu.
