This delicious oxtail recipe is slow cooked to perfection with flavorful spices, tender meat, and a thick mouthwatering gravy that pairs perfectly with nshima, rice, or mashed potatoes π€€π₯

Ingredients:
β’ oxtail
β’ 2 onions (chopped)
β’ 3 tomatoes (blended or chopped)
β’ 1 tbsp tomato paste
β’ 3 cloves garlic (minced)
β’ 1 tsp ginger(optional)
β’ 1 green pepper
β’ 1 beef stock cube
β’ 1 tsp paprika
β’ 1 tsp black pepper
β’ Salt to taste
β’ Cooking oil
β’ Water
β’bbq spice
β’ chopped parsley for garnish

1οΈβ£ Wash and season the oxtail with salt, black pepper, paprika, garlic, bbq spice and ginger.
2οΈβ£ In a pot, heat oil and brown the oxtail pieces for a few minutes.
3οΈβ£ Add onions and cook until soft, then add tomatoes and tomato paste. Stir well.
4οΈβ£ Add enough water and the stock cube, then cover and let it cook slowly until the meat becomes tender.
5οΈβ£ Add green pepper. Allow everything to simmer until the gravy thickens beautifully πππΎ
6οΈβ£ Serve hot with nshima, rice, or mashed potatoes ππΎππΎ
