STRAWBERRY CREAM CHEESE LOAF 🍓🍞
Ingredients
For the Loaf
* 1 1/2 cups all-purpose flour
* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/2 cup unsalted butter, softened
* 3/4 cup granulated sugar
* 2 large eggs
* 1 tsp vanilla extract
* 1/2 cup sour cream
* 1/4 cup milk
* 1 1/2 cups diced fresh strawberries
For the Cream Cheese Filling
* 8 oz cream cheese, softened
* 1/4 cup granulated sugar
* 1 egg yolk
* 1/2 tsp vanilla extract
For the Glaze
* 1 cup powdered sugar
* 2 tbsp milk
* 1/2 tsp vanilla extract
* Pinch of cinnamon (optional)
Instructions
1. Preheat the oven to 350°F. Grease and line a 9x5-inch loaf pan with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, beat the butter and sugar until light and fluffy, about 2 to 3 minutes.
4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
5. Mix in the sour cream and milk until smooth.
6. Gradually add the dry ingredients and mix just until combined. Fold in the diced strawberries.
7. In a separate bowl, beat together the cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
8. Spread half of the loaf batter into the prepared pan.
9. Spoon the cream cheese mixture over the batter and gently spread it into an even layer, leaving a small border around the edges.
10. Top with the remaining batter and smooth the surface.
11. Bake for 55 to 65 minutes, or until a toothpick inserted into the cake portion comes out clean and the top is golden brown.
12. Allow the loaf to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
13. Whisk together the powdered sugar, milk, vanilla, and cinnamon until smooth.
14. Drizzle the glaze generously over the cooled loaf, allowing it to run down the sides.
15. Slice and serve. The loaf should be moist and buttery with pockets of fresh strawberries, a rich cream cheese center, and a sweet vanilla glaze on top. 🍓✨
